Introduction

Only on special occasions because of the cheese. Only on special occasions because of the cheese.
Number of Servings: 3

Ingredients

    4 large eggs
    2 servings hash brown shreds (I use Schwan's)
    1/4 fresh jalapeno (blanched to make milder if you want)
    1 cup chopped onions
    1/2 cup shredded cheddar cheese

Directions

Heat olive oil and season salt in skillet. Add onions and pepper and cook until just browned, onions should be translucent. Add hash browns, stir together and cover. Cook for about 5 minutes, stirring regularly. Add eggs, cook as if you were scrambling them, stirring continuously. Top with shredded cheese, stir in. Serves 3.
