White Bean Chicken Salad

Ingredients

    1 cup white beans with some liquid
    3/4 cup shredded chicken
    1/2 teaspoon cumin
    1/2 teaspoon chili powder
    3 cups romaine lettuce, torn
    1/2 avocado, sliced
    2 plum tomatoes, diced
    10 pecan halves
    10 red grapes, halved (or 1-2 TBSP craisins)
    2 tablespoons lowfat sour cream
    2 tablespoons guacamole
    2 tablespoons shredded mexican cheese

Directions

Makes 2 large dinner salads.

Use leftover home cooked white beans and leftover boiled chicken.

Take 1 cup of beans (with some liquid) and add 1/2 teaspoon each of cumin and chili powder. Heat in saucepan to boiling and add 3/4 cup shredded chicken. Set aside.

Assemble salad greens by placing 1 1/2 cups romaine lettuce in salad bowl. Place a handful (6-8) red grapes along with 6-8 whole pecan halves over lettuce leaves. Place avocado slices around salad. Dice roma tomatoes and sprinkle over greens.

Place 1/2 of the chicken/bean mixture in the center of each salad and top with 1 tablespoon of lowfat sour cream. Place fresh or canned jalapeno slices on sour cream.

Garnish salad with a mound of guacamole and cheese on each side of salad.

Salad dressing is optional.
