Chicken with pomegranet juice and walnuts

Introduction

This is an eastern dish, a bit elaborated but very tasty . This is an eastern dish, a bit elaborated but very tasty .

Ingredients

    1 whole chicken cut to small pieces
    200 ground walnuts
    200 ml pomegranet juice home made ( best sour pomergranet)
    1 large onion
    1 small yellow apple
    tsp tumeric
    1 tbs olive oil
    salt
    pepper
    tumeric
    1L home made chicken stock
    1/2 kg cauliflower rice

Directions

makes 6 servings:

1- In a food processor mince onion and the apple.

2- Fry the obtained onion and the apple paste in 1tbs of olive oil, add tumeric too.

3- Heat gently the pomegranet juice till it is reduced to at least 1/3 and has a syrup texture.

4- Add the ground walnut to the onion and apple paste, moving it constantly to avoid burning for 2 min.

5- Add the chicken stock and the pomergranet syrup to the pan, bring to boil , then reduce heat and cook for 1 1/2 hour, till the fat from the walnut is visible on top.

6- While the sauce is cooking , brown the chicken on both sides.

7- Add the chicken to the sauce, add salt and pepper , and cook on low heat another 30-40 min , until the chicken is tender.

8- Make cauliflower rice to serve it with or basmati rice.
