Tahena's Ginger Lentil Loaf

Ingredients

onions
olive oil
lentils
garlic
ginger
black pepper
curry powder
roma tomatoes
red bell pepper
mushrooms
ground flax
flour
Directions
par cook lentils while preparing everything else in about 3 cups of water
In heavy bottomed pan sautee chopped onions, minced garlic, finely chopped ginger in a bit of olive oil (or oil of your choice).
Add to it chopped red pepper, let cook for a few minutes.
When the lentils are half way cooked, add entire pot to the onion mixture, including the cooking water.
Mix well.
Dice finely 2 roma tomatoes and add to the pot.
finely dice the mushrooms and add to the pot.
Let simmer a few minutes.
stir in 6 tbsp of ground flax seed, and 1 cup of flour (this is my current solution to making it all stick together without using eggs or chemical egg substitutes).
Pack into two loaf pans, and place in a 400 degree oven for 60 minutes.
Makes 2 loaf pans worth, and about 8 - 10 servings.
