Banana Nut Bread

Ingredients

    6 oz. all purpose flour
    2 oz. brown sugar
    1 oz. sugar
    2 oz. spelt flour
    2 tsp. baking powder
    2 tsp. cinnamon
    1/2 tsp. salt
    1/2 cup plain greek yogurt
    2 tbsp. half and half
    3 tbsp. olive oil
    1 egg
    1 egg white
    2 bananas, mashed
    1.5 oz. walnuts, chopped

Directions

Preheat oven to 350 degrees F.

Combine flours, baking powder, cinnamon, salt, sugar, and brown sugar in a bowl and set aside.

Combine greek yogurt, bananas, egg, egg whites, half and half, and olive oil. Whisk well.

Fold wet ingredients into the dry and then gently stir in the walnuts.

Bake in a greased loaf pan for 45 minutes.
