IntroductionA healthy version that my kids LOVED! A healthy version that my kids LOVED!
1/2 cup white flour
1/2 cup whole wheat flour
3 tsp. baking powder
1/2 tsp. salt
2 TBSP. granulated sugar
1/2 cup oat bran
1 large egg
1 1/2 TBSP oil
1 cup 1% or skim milk
1 tsp. vanilla extract
In a large bowl, sift white flour, whole wheat flour, baking powder salt and sugar together. Add oat bran and stir to combine well.
In a smaller bowl, combine egg, oil, milk and vanilla and whisk to mix well. Add liquid to dry ingredients and stir well to combine, but do not overstir.
Spray hot waffle iron very lightly with cooking spray. Scoop mix with a ladle onto waffle iron and cook until lightly browned and crisped. Makes 5 waffles.
1 cup fresh strawberries and 1/4 cup lowfat ricotta cheese (my favorite)
1/2 cup lowfat vanilla yogurt and 1 cup mixed fresh fruit
1 1/2 tbsp peanut butter, sliced bananas and wheat germ
