Coconut Rice

I've included this to go along with my posted recipe for West Indian Red Beans, which, along with this rice, makes for a fantastic Carribean meal! This rice is also wonderful with sesame tofu/chicken or spicy curry dishes. Ingredients

1 1/2 cups dry white rice
1/2 tsp turmeric
1/2 tsp salt
1 tsp. canola oil
1 1/2 cups water
3/4 cup light coconut milk
Directions
Rinse and drain the rice. In a saucepan, saute the rice, turmeric and salt in the oil over medium heat for two minutes, stirring constantly. Add the water and coconut milk, bring to a boil, then cover and reduce the heat to low. Simmer until the rice is tender and all the liquid is absorbed, about 15-20 minutes.
