IntroductionThis is a very filling soup that even the kids love. It's a great way to sneak in some veggies. This is a very filling soup that even the kids love. It's a great way to sneak in some veggies.
8 cups Campbell's low sodium chicken broth
1 1/2 cup Zucchini, cubed
1 1/2 cup Broccoli, fresh, chopped
1 cup Green Bell Peppers chopped
2 Chicken Breast, cooked skin removed cubed or shredded.
1 Tbsp Thyme,
3 cloves Garlic, minced
1 1/2 cup Flour,
3 tsp Baking Powder,
3/4 cup Milk, 2%
1/4 tsp Salt,
Meanwhile, in a small bowl mix flour, salt and baking powder. Stir in milk.
Drop by spoonful into boiling broth. Cover and reduce heat. Simmer for 20 minutes. Do not remove lid while cooking!
After the 20 minutes remove lid and gently stir.
Thicken with a little cornstarch if desired.
Makes about 12 servings.
