Bowl of the wife of Kit Carson Soup

Ingredients

    16 ounces Chicken Breast, no skin, cooked & cubed
    1.5 cup Brown Rice, medium grain, cooked
    1.5 cup Black Beans
    48 fl oz Chicken Broth

    Adobo sauce:
    1 T chopped Green Chili Peppers
    2 cloves garlic
    4 tbsp Ketchup
    5 tbsp Cider Vinegar
    .5 medium (2-1/2" dia) chopped raw onion
    2 cups water

    1 package (6 oz) Monterey Cheese, cubed
    (1/2) Avacado, cubed

Directions

Make Adobo sauce first: mix ketchup, vinegar, chili peppers, garlic and raw onion with 2 cups water; boil without lid until reduced by half (approx. 20 - 30 minutes). Combine this mixture with chicken broth, chicken, beans and bring to a boil. Reduce heat and simmer 20 minutes. Add cooked rice and simmer 5 more minutes. Sprinkle cheese and avacado cubes in bowls, ladle soup over top. Serve with crusty bread for a tasty yet light meal! Makes 8 one cup servings.
