White Chicken Chili

Introduction

5 chicken breasts. Boil until tender, cool then cube
3 cans (15oz each or so) Great Northern Beans, undrained
2 cans (15 oz each or so) Rotel Tomatoes and green chilis
1 small can (4oz) chopped green chilis
49 oz (6 cups) chicken broth (swanson low sodium)
1 160z reduced fat sour cream
3 cups shredded monterey jack cheese (low fat if you can find it!)
2 tsp cumin
2 cloves garlic - chopped
1 medium onion chopped

Number of Servings: 16

Ingredients

    boil chicken until tender, drain, cool then cube.
    saute garlic and onion in 1 TBSP olive oil until tender.
    Mix in all othe ingredients except for cheese and sour cream

    Add cheese and sour cream 30 minutes before serving so it can dissolve in the soup.

    Makes 16 1 cup servings. (it might make even more!)
