Brown Rice Pico

Introduction

Number of Servings: 6

Ingredients

    1 Large Tomato, diced
    2 Jalapenos, seeded and diced
    1/2 Cup Red Onion
    3 Tbl Chopped Cilantro
    1 Tbl Garlic Salt
    1 Lime
    2 cups Minute Rice, Brown

Directions

Cook rice by following instructions on box for a serving of four. As the rice is cooking, mix tomato, jalapenos, red onion, cilantro and garlic salt in a bowl. Squeeze lime into bowl. Stir and put in refrigerator till rice is done. When rice is done, add cilantro and stir.

Makes approx. six 1/2 cup servings.

    I made this all the time in the summer, the cilantro really makes it. I also added chopped cucumber a few times and it was so fresh tasting..... Can't wait for that first summer tomato! - 3/13/10
