Introduction

This is a really great tasting soup. I got it from a girl at work, and she said that it was from weight watchers. I'm not all too sure about that - the salt content and the calories are a bit high, but it's really great tasting on a cold day.

To cut way back on sodium, just use low sodium for all ingredients. You can use many different substitutions, such as different beans, etc..

Number of Servings: 11

Ingredients

    1 can - 14.5oz reduced sodium/fat free chicken broth.
    1 can - 15oz yellow or white corn.
    1 can - 15oz kidney beans. (can substitute any other kind)
    1 can - 19oz Minestrone soup.
    1 can - 15oz mixed vegetables.
    1 can 28oz Whole peeled tomatoes.

Directions

Pour all 6 cans into a big pot, bring to boil and then simmer on stove until hot.

Not sure how many servings it makes - but the servings are a cup each.

I actually measured how many cups this makes and it was 11.5 cups.
So, at 1 cup a serving it would make 11.5 servings.
