Introduction

Number of Servings: 7

Ingredients

    * Red capsicum (bell pepper), 900 grams
    * Breadcrumbs, 100 grams - you can use 2 slices of bread, even stale
    * Walnuts, 50 grams
    * Garlic, 3 cloves
    * Lime Juice, 0.5 lime yields
    * Hot Chili Peppers, 1 pepper
    * Cumin (powder or seed), 0.5 tsp
    * Olive Oil, 1 tbsp
    * Salt, 0.5 tsp

Directions

1. Preheat oven to 180C. Place capsicums on an oiled tray and bake for 30mins until skin is blackened. You may need to turn half-way through to ensure they are evenly roasted.

2. Place all other ingredients in a blender and pulse until mixture is smooth.

3. Take capsicums out of oven and allow to cool until you can handle them comfortably. Remove skins and inner seeds.

4. Add capsicum flesh to blender and mix thoroughly. The muhammara should be heavy and chunkier than ketchup. Add water or oil (according to your preferences) to thin it, breadcrumbs to thicken it. It will slightly thicken when left overnight in the refrigerator.

5. Serve as a dip. Muhammara is much better the day after you have made it. This recipe makes 7 servings of 100 grams.

Note: you can use more walnuts if you would like a nuttier flavour. Please be aware that this will significantly alter the nutritional values, especially calories and fat.
