Deb's Potato Soup

Introduction

This is a great meal for warm weather that is filling but not as heavy as the restaurant version of this dish This is a great meal for warm weather that is filling but not as heavy as the restaurant version of this dish
Number of Servings: 10

Ingredients

    6 to 8 yukon golds diced, 6 cups of water, chopped green onions, 1 stalk celery chopped, 1 or 2 medium carrots diced, knorr seasoning, 3 oz sharp cheddar cheese, 1 cup skim milk

Directions

Bring all ingredients to a boil except for the milk, and cheddar cheese. After potatoes have softened and carrots and celery appear to be thouroughly coooked turn stove to medium and stir in soup, milk and sharp cheddar cheese. Puree and serve immediately. Salt and pepper to taste makes 8-10 servings
