Ingredients

shredded coconut
panko bread crumbs
boneless skinless chicken thighs (or breasts whatever you have! I used thighs because they were on sale!)
coconut milk
sea salt
1egg
Directions
preheat oven to 400
cut fat off of chicken and cut into 3 chunks
mix egg and coconut milk
mix coconut and panko and salt
spray cookie sheet with pam
dredge chicken in milk/egg mix then in coconut/panko mix
arrange on sheet and bake for 25minutes!!

Super easy! The first tme I made this it was kind of bland. Someone suggested used crushed croutons instead of bread crumbs for more flavor, (good idea.) I added a little curry powder to the dry mixture and it was WONDERFUL. It gave the dish a little more flavor without adding a ton of calories. - 1/20/10

I added spices like garlic and creole seasoning to the milk bath and let the chicken soak for a 20 minutes...the chicken was moist and yummy, dipped in pineapple yogurt sauce. I used leftover chicken on top of fresh spinach, mozzarella sprinkles, green onion, and homemade honey mustard drizzle - 1/10/13

Easy and flexible. I subbed in ground pistachios in place of the bread crumbs. Served it on a tropical spinach salad (Baby spinach, sliced fresh Bowen mango, sliced avocado, sliced lady finger banana and shredded red chillies) plain Greek yoghurt and lemon juice dressing........Delicious :) - 11/26/11

I normally don't like coconut, but this sounded good. I more or less eye-balled the ingredients, and used chicken breasts instead (which meant longer time baking). I used coconut water instead of the milk. Juicy, and good flavor, not too strong, but next time I'll pass on the shredded coconut. - 5/25/11
