Introduction

Number of Servings: 6

Ingredients

    shredded coconut
    panko bread crumbs
    boneless skinless chicken thighs (or breasts whatever you have! I used thighs because they were on sale!)
    coconut milk
    sea salt
    1egg

Directions

preheat oven to 400
cut fat off of chicken and cut into 3 chunks
mix egg and coconut milk
mix coconut and panko and salt
spray cookie sheet with pam
dredge chicken in milk/egg mix then in coconut/panko mix
arrange on sheet and bake for 25minutes!!

    Kitty, you can figure the quantities by looking at the nutritional breakdown and multiply by 6 servings:

    6 chicken thighs
    1 cup shredded coconut
    1/4 cup coconut milk
    1/2 panko
    1 egg

    Super easy! The first tme I made this it was kind of bland. Someone suggested used crushed croutons instead of bread crumbs for more flavor, (good idea.) I added a little curry powder to the dry mixture and it was WONDERFUL. It gave the dish a little more flavor without adding a ton of calories. - 1/20/10

    This is one of my favorite chicken recipes EVER! It was extremely easy to make (even for someone like me with no skills in the kitchen). The flavor and texture is incredible with juicy chicken and sweet crunchy outside! Will definitely make this again! - 2/9/11

    I've tried this tonight and it was extremely good. I did mine with boneless chicken thighs. I marinated the wet mixture with Ms Dash Lime Fiesta seasoning and juice from one lime. I mixed the pankos/coconuts with garlic powder, paprika and a tsp of salt... so so so so good. - 3/16/13

  • I made this recipe and sub. crushed almonds for the beread crumbs to make it universal for both high or low carb days , turned out great. the only thing that kept me from giving it 5 stars was it was bland definitely need to ass some spices to the coconut ix before dipping your chicken - 11/4/13

  • I added spices like garlic and creole seasoning to the milk bath and let the chicken soak for a 20 minutes...the chicken was moist and yummy, dipped in pineapple yogurt sauce. I used leftover chicken on top of fresh spinach, mozzarella sprinkles, green onion, and homemade honey mustard drizzle - 1/10/13

    This was AWESOME! Dh's first comment - "Keeper". I used unsweetened coconut, vanilla soy milk and coconut manna with the egg, bran cereal for the panko, and chicken breasts. Forgot the baking spray & salt :-) Perfection! Thank you for sharing!! - 2/24/12

  • Wonderful and my young boys loved it with sweet and sour dip. I did use a shake and bake instead of the panko crumbs and it gave the breading a great flavor without having to add any other seasonings. Will add to my weekly meal list. - 1/8/12

  • Easy and flexible. I subbed in ground pistachios in place of the bread crumbs. Served it on a tropical spinach salad (Baby spinach, sliced fresh Bowen mango, sliced avocado, sliced lady finger banana and shredded red chillies) plain Greek yoghurt and lemon juice dressing........Delicious :) - 11/26/11

  • I normally don't like coconut, but this sounded good. I more or less eye-balled the ingredients, and used chicken breasts instead (which meant longer time baking). I used coconut water instead of the milk. Juicy, and good flavor, not too strong, but next time I'll pass on the shredded coconut. - 5/25/11

  • A very tasty dish and a wonderful alternative to traditional baking dishes. I also found that the batter works pretty good for shrimp too. I did use the orchid and honey panko since that was all my local grocer had. Made the recipe nice and sweet! - 2/6/10
