chicken & Cashew nut Stir Fry

Introduction

Normally served with jasmine (fragrant) rice. Could also be served with noodles. Normally served with jasmine (fragrant) rice. Could also be served with noodles.
Number of Servings: 4

Ingredients

    500g skinless chicken breast fillets, sliced into strips
    1 tbsp oil
    1 onion, sliced
    1 yellow pepper, deseeded and cut into strips
    1 red pepper, deseeded and cut into strips
    3 tbsp chicken stock
    2 - 3 tbsp LIGHT soy sauce
    2 large spring onions (scallions), sliced
    4 tbsp cashew nuts, roasted or toasted in a pan
    sea salt and ground white pepper

Directions

1. Heat a wok over a high heat and add the oil. Add the onion and fry for a few seconds, then add the chicken and fry until just opaque.

2. Add the yellow and red pepper slices and stir fry for 1 minute until they have softened a little.

3. Add the stock, soy sauce, salt and pepper.

4. Finally add the spring onions and cashew nuts and stir well.

Serve
