Egg, fresh, 3 large
Unbleached White Flour, Harvest King, 3 cup
Salt, .50 tsp
Basil, 3 tbsp
Water, tap, .33 cup (8 fl oz)
Roll through pasta machine at 7thickness
Then again at 3 thickness
Hang for 10 minutes
Run through linguine cutter
Hang again for 10 minutes
Add to boiling water
Cook for 3 minute, stir to separate noodles
Old Fashioned way
Mound flour and make a well for wet ingredients and fold in
Hand roll with rolling pin and cut with pastry cutter or spatula
Hang or let sit to dry for about 10 minutes so that they do not cling together in a lump when boiling
Boil for 3 min. on stove to andante
Add homemade light sauce or toss with extra virgin olive oil and parmesan cheese.
