Introduction

This lovely Italian dish is vegetarian friendly but even meat eaters can appreciate it! Pairs great with a healthy green salad! This lovely Italian dish is vegetarian friendly but even meat eaters can appreciate it! Pairs great with a healthy green salad!
Number of Servings: 8

Ingredients

    2 peeled eggplants about 27 oz makes 8.9 cubes cubed
    1/2 jar of marinara sauce about 2 cups
    4 oz fresh mozzarella not shredded but it will work
    garlic 3 small cloves chopped roughly
    Italian style breadcrumbs 1 cup
    3 Tbsp of Extra virgin olive oil

Directions

in a mixing bowl or casserole dish cut eggplant into bit size pieces and coat with olive oil and bread crumbs, add roughly chopped garlic cloves to the mix, add marinara sauce and chop small bite size pieces of fresh mozzarella to sprinkle over top of the dish. cover casserole dish in tin foil, make cuts in top of tin foil to allow steam cooking. Bake in a 350 oven for 45 minutes
