I always make this following a night of crockpot pulled pork because we have insane leftovers and it's delish! The chicken is optional to me, I just happened to have some on had and though why not. I leave out the traditional lima beans cause Hubby doesn't like them. Adjust seasoning to your taste as well - I like mine vinegar-y! Ingredients

2 T Extra Virgin Olive Oil
1 medium onion, chopped
1/2 small can tomato paste
2 t Worcestershire sauce
1 can diced tomatoes
1 1/2 cup frozen yellow corn kernels
1 lb cooked pork loin
1 cooked chicken breast, shredded
2 medium potatoes, diced
1 carton reduced-sodium chicken broth
1/4 c cider vinegar
1 t garlic powder
2 T ketchup
4T barbecue sauce
salt and pepper to taste
Directions
Heat olive oil in a soup pot and saute the onion until translucent. Stir in tomato paste, diced tomatoes and worcestershire. Add meat, corn, potatoes, broth and seasonings. Bring to a boil, cover then reduce to simmer for about 30 minutes.
This makes 10 servings of 2 ladles of stew in each serving.
