When I found low fat coconut I knew I wanted to make coconut custard right away. Ingredients

2 eggs
1 cup skim milk
.5 cup unsweetened reduced fat coconut
1/6 cup flour
1.5 Tbs butter
.5 teaspoon vanilla
1/8 teaspoon salt
1/4 cup honey
Directions
Place all ingredients into a blender jar except honey. Pulse quickly several times to blend. Add honey and pulse again briefly . Pour into 4 ramekins that have been sprayed with nonstick spray. Bake at 325 for 30 minutes. Serves 4
