L.R. Pumpkin pudding

Ingredients

    6 eggs, lightly beaten
    1021g (4 cup) canned pumpkin
    275g (1-1/2 cup) sucanat
    18g (2 T.) whole wheat flour
    1 tsp. vanilla
    1 tsp. salt
    2 tsp. cinnamon
    1/2 tsp. finely ground black pepper
    1 tsp. ginger
    1/2 tsp. mace
    1/2 tsp. nutmeg
    3-1/2 cups 2% milk

Directions

Whisk together eggs, pumpkin, sucanat, flour and spices until thoroughly combined. Add milk and mix well. Pour into a greased 9"x13" glass baking dish. Bake at 350 for about 1 hour or until set. Makes about 25- 100g servings.
