Creamy Chicken Curry

Introduction

Nice curry dish for the cold weather. This is rather americanized so even my picky DH will eat this. Quick and easy if you already have the rice and chicken cooked as I tend to do. Nice curry dish for the cold weather. This is rather americanized so even my picky DH will eat this. Quick and easy if you already have the rice and chicken cooked as I tend to do.
Number of Servings: 4

Ingredients

    2 cups cooked brown rice
    12 oz shredded chicken breast
    1/2 medium onion chopped
    2 cloves garlic minced
    1 red pepper diced finely
    1 teaspoon salt
    2 Tablespoons flour
    1 12oz bag frozen mixed vegetables
    1 14 oz can evaporated skim milk
    1 Tablespoon fresh lemon juice
    black pepper to taste
    3-4 teaspoons curry powder

Directions

spray non stick skillet spray just to coat. Saute onion, garlic and bell pepper untill they start to soften. Add shredded chicken, salt, pepper and curry powder. Cook until chicken starts to brown. Add flour and heat thru stirring constantly. Add evaporated milk. Stir until bubbly and thick. Add frozen vegetables, rice and slowly heat back thru. Serves 4. Try with a salad and a glass of wine.
