Veggie Stoup with chicken

Introduction

Number of Servings: 12

Ingredients

    3 cups broccoli
    3 cups cauliflower
    3 cups carrots
    1 cup peas
    1 cup greenbeans
    4 1/2 breasts of chicken
    1 tsp cumin powder
    1 tsp Mrs. Dash SouthWest Chipotle
    1 tbsp kosher salt
    6 cups of water
    4 cups of chicken broth
    6 tbsp cilantro

Directions

Put everything in the pot! Cook until veggies are soft. I leave mine on the cookstove for a few hours. Take the chicken out and set aside. CAREFULLY blender all those veggies to make a nice thick sauce. Return to pot. Shred chicken with 2 forks and return to pot. Add cilantro. It's really good topped with shredded Cabot Cheddar Cheese, but I didn't put that in the ingredients in case you've got a problem with lactose or just trying to keep the calories down.
