1 large yam, cut into fries (about 12 oz.)
12 oz. red potatoes cut into fries
1 tsp salt
1 tsp sugar
1 tsp paprika
1 tbs. olive oil
Toss in a bowl with salt and sugar.
Allow the fries to sit for 15-20 minutes so that water is released.
Preheat oven to 425 F
Dry the fries by spinning in a salad spinner or blotting with paper towels
Drizzle fries with 1 tbs. olive oil and sprinkle on the paprika.
Toss well then bake in the hot oven for about 25 minutes or until crispy.
These fries are good with fish, chicken, steak or by themselves.
