Introduction

This is simply the peanut butter blossom cookies I grew up with, with Reese's miniature peanut butter cups inserted into the center of the warm cookie, instead of the usual Hershey's kiss. A new twist on an old favorite. Ingredients

    48 mini Reese's pb cups
    3/4 cup creamy peanut butter
    1/2 cup shortening
    1/3 cup sugar
    1/3 cup packed light brown sugar
    1 large egg
    2 tablespoons skim milk
    1 teaspoon vanilla extract
    1 1/2 cups flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/4 cup granulated sugar

Directions

Heat the oven to 375'F. Remove wrappers from chocolates.

Beat peanut butter and shortening with an electric mixer on medium speed in a large bowl until well blended.
Add 1/3 cup sugar and brown sugar; beat until fluffy.
Add egg, milk, and vanilla; beat well.
Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.

Shape dough into 48 (1 inch balls). Roll in the additional 1/4 cup of sugar and place on an ungreased cookie sheet.

Bake 8-10 minutes or until lightly browned.
Remove from the oven and immediately press an upside down peanut butter cup into the center of each cookie. Cookies will crack around the edges.

Remove to wire rack and cool completely. Enjoy!
