My First Meatloaf

My First Meatloaf

Introduction

Well, I didn't have most of the ingredients recommended for most meatloaf recipies (no dry mixes, no crackers, no ketchup, no barbeque sauce . . .) and so I called my friend Rose, who was my Latin professor back in the day. She helped me figure out what to use. Shannon, another friend, advised on cooking time, length, and form.

So, if you too are short of recommended ingredients, this may provide a nice alternative!

Ingredients

    Start with what you have. For me it was the following:

    1 can Hunt's Fire Roasted Tomatoes with Garlic
    1.5 pounds of lean ground beef
    1/2 cup chopped onion
    1/2 cup chopped green pepper
    1/4 cup milk
    some water
    1 egg
    two slices of toasted bread (Double Fiber by Orowheat)
    ground garlic pepper

Directions

Form into loaves and cook in a preheated oven at 375 until it's done, or an hour is up, whichever suits you best!
I understand that you can start with the ends of the loaves if you get hungry before it's completely done.

Also, we cooked ours in cast iron skillets so as to increase the iron content. Every little bit helps!

  • I used ketchup on top since I didn't have the tomatoes with garlic and Ezekiel 4:9 Sprouted 100% Whole Grain Bread provides 3g of dietary fiber per slice. I definately would make this again. Thanks TANGO5617 for sharing. - 1/18/10
