Crystal's Homemade Chicken Noodle Soup

Introduction

Ingredients

    2 Tbsp olive oil
    1/2 large yellow onion, diced
    1 large carrot, peeled and chopped
    1 stalk celery, chopped
    1 1/2 chicken breasts, chunked
    2 cloves garlic, minced
    2 Tbsp organic, unbleached, all purpose flour
    2 32-oz boxes of Organic chicken broth (no MSG!)
    1 cup water
    1/2 package of Bechtle Spaetzle - Traditional German Egg Noodles
    2 Tbsp fresh parsley, chopped
    1/2 tsp ground thyme
    1/2 tsp ground sage
    Salt, 1 tsp (more to taste if desired)
    Ground black pepper to taste

Directions

In a large cooking pot, heat olive oil over medium-high heat. Saute onions, carrots, and celery, until the onions are transluscent. Add the chunks of chicken and garlic. Sprinkle the flour on top of the mixture. Saute until the chicken is cooked through. Add the broth, water and seasonings. Increase to high heat and bring to a boil. Add the noodles, stirring occasionally to prevent sticking. Cook about 20 minutes or until the noodles are softened.

Makes about 8 hearty sized bowls.
