Pasta Sauce Using Home Grown & Canned Tomatoes

Introduction

Homemade sauce, using a home canned tomatoes. You could add additional spices and pasta. This time I didn't, mostly because I forgot. Sometimes its also nice, just to let the veggies stand alone. Number of Servings: 6

Ingredients

    1 quart home canned crushed tomatoes
    2 tbs store bought tomato paste
    2 cups sliced mushrooms
    1 red bell pepper
    3 cups baby spinach
    20 olives
    cooking spray

Directions

Place crushed tomatoes and tomato paste in sauce pan and heat to simmer. Mean while, cut pepper in half and place under broiler until it gets little black spots. Saute mushrooms in small pan, using cooking spray. Slice olives

Cool enough to tough, then cut roasted pepper and add to sauce. Add mushrooms to sauce when browned up and fragrant. Add spinach directly to sauce in bunches, stir until leaves wilt. Remove from heat, odd olives.
