sirloin and blue cheese salad

Ingredients

    4 oz. lean sirloin steak, trimmed
    1 tbsp white wine vinegar
    1 tsp dijon mustard
    1 tsp olive oil
    1 head bibb lettuce
    1/2 cup cucumber
    1/2 cup red bell pepper strips
    1/4 cup thinly sliced shallots
    1.5 ounces crumbled blue cheese

Directions

Cook steak to preference, slice across the grain

Combine vinegar, mustard, and a dash of salt and pepper in small bowl, stirring with a whisk. Gradually add oil, stirring with a whisk. Combine lettuce, cucumber, bell pepper, and shallots in a large bowl. Drizzle vinaigrette over salad; toss gently to coat. Top salad with steak and cheese.

Yield: 1 large serving or 2 side servings.
