3/4 cup flour 1/2 cup whole wheat flour 1/2 cup Splenda 1 Tbls baking powder 1/2 tsp baking soda 1/4 tsp salt 1tsp cinnamon 2 cups All-Bran cereal 1 1/2 cups unsweetened applesauce 1/4 cup 2% milk 2 eggs 1/2 cup raisins
Stir together flours, sugar, baking powder, soda, salt and cinnamon. Set aside. In large mixing bowl, combine All-Bran cereal, applesauce and milk. Let stand about 5 minutes or until cereal softens. Add eggs. Beat well. Add raisins and flour mixture, stirring only until combined. Portion evenly into 18 muffin cups coated with cooking spray. Bake at 400 degrees for 20 minutes or until lightly browned. Serve warm.
