Coconut Chicken

Ingredients

    2 chicken breasts, pounded and sliced into 4 flat breasts
    1 cup panko breadcrumbs
    1 cup shredded coconut
    4 Tbsp olive oil
    1 Egg

    Sauce
    Pineapple preserves 6 tbsp
    1/4 cup rice wine vinegar
    chopped green inions 1/2 cup

Directions

pound out 4 chicken breasts, dip the chicken in egg, then mixture of coconut & breadcrumbs and fry in olive oil in pan. Keep warm in oven on tray at 250 while you finish the other chicken breasts.

Mix remaining ingredients on med heat in pan for sauce.
