Mammaw's Thai Scrambled Eggs

Submitted by: LADYLOOMI

Introduction

They're technically oriental scrambled eggs, but my mammaw always called them thai scrambled eggs and that is how they shall remain! They're technically oriental scrambled eggs, but my mammaw always called them thai scrambled eggs and that is how they shall remain!
Number of Servings: 4

Ingredients

    4 eggs
    2 scallions (green onions)
2 tbsp nam pla (thai fish sauce...can be found in the ethnic aisle of most grocery stores)

Directions

heat a skillet to a medium heat.
while that's heating up chop up your scallions and scramble your eggs and mix them together with the nam pla.
once your skillet is hot pour the eggs in and cook like an omlet.
once the eggs are done put them on a plate and cut the piece you want and enjoy!

**if you're really daring you can try frying it in 2 tbsp of oil...it'll make the edges of the egg nice and crispy. :)
