Couscous with Tomatoes, Green Onions and FetaSubmitted by: ZELLAZM

Couscous, 1 cup or 160 gr dry
Water or vegetable broth, 1 1/2 cups
Fresh Garlic, 2 cloves (or more!)
Green onions/Scallions, 1 cup chopped or 60 grams
Tomatoes, canned, 1 can 400 grams
Cumin powder, 3/4 tsp
Cinnnamon, 3/4 tsp
Sambal oelek (hot pepper paste)
Feta cheese, low-fat, 100 gr or 3/4 cup crumbled
Chop or press the garlic, chop the canned tomatoes and green onions and add to a non-stick frying pan. Heat to boiling and simmer about 5 minutes while adding the spices. I also use about 1/4 tsp of sambal oelek, a hot pepper paste. Just before serving, add the crumbled or cubed feta cheese, allowing it to melt slightly.
