Introduction

Easy slow cooker recipe I use with left-over ham. Easy slow cooker recipe I use with left-over ham.
Number of Servings: 8

Ingredients

    1 bag (1lb) pinto beans
    4 cups H20
    8 oz diced ham, diced
    2 gloves garlic, crushed
    1 med. onion, chopped (about 1 C)
    1 tsp crushed red pepper
    1/2 tsp salt
    1/4 tsp black pepper
    1 tsp thyme
    1 tsp oregano
    1 can (15oz) no salt added diced tomatoes

Directions

Rinse pinto beans and discard any stones. Place in pot and cover with water. Soak overnight. Drain and place in crockpot. Cover with 4 cups water.
Add all other ingredients. Cover and cook on low 8-10 hours, until beans are soft to your liking. If you want, add more ham at the end of cooking to amp up the flavor. Makes 8 servings.
