Baked Zucchini Marinara

Submitted by: PAMRIE

Introduction

This is super easy, low in calories and flavorful. I make variations with Italian sausage and different veggies, but I wanted to keep it basic here. Use your imagination! Also, sometimes I add some more spices to the sauce, but this sauce is great on it's own.
Zucchini Slices baked in MUIR GLEN ORGANIC PIZZA SAUCE topped with mozzarella and Parmesan cheese. I use Muir Glen because it has no added sugar and is thick and delicious.

  • Yummy! Like lasagna with no pasta -- tasty and gluten-free. :) Next time, I'll cook the zucchini ahead of time and cut down the baking time. There was too much water in the pan. Otherwise, it made for a great dinner. - 3/28/12

  • I can't get pasta down, but maybe if I shredded it in the food processor I could do this. Same with the zucchini and some vegetarian burger. I also could add lots of shredded veggies.
    Sounds wonderful! - 1/31/11
