Introduction

Number of Servings: 2

Ingredients

    3 tablespoons sunflower oil
    1 teaspoon cumin seeds
    1 medium onion, chopped
    1 teaspoon ginger-garlic paste
    1 tablespoon tomato puree
    1 teaspoon garam masala powder
    1/2 teaspoon turmeric powder
    salt
    1/2 teaspoon sugar
    600g (1 1/4 lb) baby cauliflower
    4 tablespoons coriander leaves, chopped

Directions

Serves 1 or 2

1 - Heat the oil in a saucepan. Add the cumin seeds and as soon as they darken, add the onion. Cook until it is softened

2 - Add the ginger-garlic paste and tomato puree and stir. Tip in the spices. Cook until well blended.

3 - Add the salt and sugar. Place the whole cauliflower in the sauce, and baste it. Add 150ml (1/4 pint) boiling water and cover the pan.

4 - Allow the cauliflower to just soften but not become mushy. Serve hot with coriander sprinkled on top.
