Fragrant, flavorful, very low calorie, but big on taste; a satisfying small bowl of soup that I find helps curb the midday munchies. Super fast to prepare. Ingredients

1/2 c. water
1 tsp light yellow miso
1/2 scallion, sliced
1/4 c. torn fresh spinach
1/16 c. firm tofu cut into very small cubes (or less)
pinch salt
pinch garlic powder
pinch chicken bouillon granules
1 drop dark sesame oil
pinch of red pepper flakes- optional
Directions
heat water to boiling. Add tsp of miso to water and stir until dissolved. Add salt, garlic and bouillon to broth, stir.Press any excess liquid from tofu. Add to soup along with scallions. Turn off heat. Add drop of oil and spinach, sti, and allow to sit 30 seconds or until spinach begins to wilt.
