Ingredients

    Haddock (fish), 4 fillet (remove)
    Stewed Tomatoes, 1.75 cup (remove)
    *Peppers, sweet, red, fresh, .5 large (2-1/4 per lb, approx 3-3/4" (remove)
    Onions, raw, 1 medium (2-1/2" dia) (remove)
    Mushrooms, fresh, .5 cup, pieces or slices (remove)
    Cilantro, raw, 2 tbsp (remove)
    Red Wine, 2 fl oz (remove)
    Parmesan Cheese, grated, 1 tbsp (remove)
    Celery, raw, 2 stalk, medium (7-1/2" - 8" long) (remove)
    Olive Oil, 1 1tsp (remove)
    Garlic, 3 cloves (remove)

Directions

Put oil in large skillet. saute all the veggies, cook until tender. Add stewed tmatoes and wine near end of cooklng time. Put fish in baking dish. Spread veggies on top. Bake for 20 minutes at 375.
