Oniony Beef and Vegetable Soup

Introduction

Ingredients

    ½ lb boneless top round steak
    vegetable spray
    1 t olive oil
    1 ½ c thinly sliced onion
    1 t sugar
    ¾ t salt
    1 T minced garlic
    1 ½ c water
    2 c beef broth salt free
    1 14oz can whole tomatoes, chopped, no salt
    ½ t dried thyme
    ½ t pepper
    1 bay leaf
    1 ½ c. chopped cabbage
    1 c. chopped celery
    1 c sliced carrots
    1 med. Yellow squash cut into chunks
    1 small zucchini cut into 1 inch chunks

Directions


Trim fat from steak, cut steak into 1 inch pieces. Coat a dutch oven with cooking spray; place over med-heat until hot.
Add steak; cook until browned on all sides, stirring frequently.
Remove steak from dutch oven and set aside.
Add oil to dutch oven. Place over med-hi heat until hot. Add onion; sauté 5 minutes or until tender. Reduce heat to med-low; add sugar and salt. Cook for 15 minutes to 20 minutes until golden. Add garlic and cook 1 minute.
Add beef, water and next 5 ingredients to onion mixture. Bring to boil. Cover, reduce heat and simmer 1 hour.
Add cabbage and remaining ingredients. Cover and simmer 25-30 minutes or until veggies are tender. Remove and discard bay leaf. Ladle soup into bowls. 8 1- c. serving.
