Soybean and Veggies with Lemon and Garlic

Introduction

A nice alternative to meat. Add seasonings to your taste. I added all-purpose seasonings and some Italian herbs. I added garlic powder because I was out of fresh garlic, but 3 cloves of chopped fresh garlic would add a nice touch to the lemon and Italian flavor. A nice alternative to meat. Ingredients


    * Winn-Dixie Shelled Organic Soy Beans (1/2 c), 425 gram(s) (remove)
    * Onions, raw, .5 medium (2-1/2" dia) (remove)
    * Carrots, raw, 4 medium (remove)
    * Peppers, sweet, red, raw, sliced, .5 cup (remove)
    * Olive Oil, 2 tbsp (remove)
    * Cauliflower, raw, .5 head, large (6-7" dia) (remove)
    * Red Ripe Tomatoes, 2 Italian tomato (remove)
    * *Lemon Juice, 1 fl oz (remove)

Directions

Saute the onions and peppers in the olive oil, then add the carrots and cauliflower until tender. In the last 5 minutes, add chopped tomatoes and lemon juice, cover and simmer.

Serve over noodles or brown rice!
