Chocolate Chip Banana Protein Muffins

Introduction

Number of Servings: 12

Ingredients

    3 very ripe medium bananas
    1/4-1/2 cup applesauce
    1/2 cup NuNaturals stevia baking blend**
    1/4 cup light oil (I used sunflower)
    2 Tbsp molasses
    1 cup whole wheat flour
    1 cup protein powder
    3/4 tsp baking soda
    1/2 tsp cinnamon
    1/4 tsp nutmeg
    1/2 tsp salt
    1/2 cup chocolate chips (optional, but yummy)

    **NuNauturals Baking Blend is a low calorie sweetener made from stevia. You can substitute plain sugar, or Splenda for baking.

Directions

Preheat oven to 350

Break up bananas and mash well*.

Add 1/4 cup applesauce, sugar substitute (or sugar), oil, and molasses, and mix very well until well incorporated.

Add whole wheat flour, protein powder, baking soda, cinnamon, nutmeg, and salt. Mix until just incorporated.

Lightly mix in chocolate chips, if using, being careful not to overmix the batter.

Divide into well greased muffin tins and bake for 18-20 minutes. Let cool and enjoy :)





*Tip: If you have not so ripe bananas, try putting them in the microwave for 30 sec to 1 min for them to become more mashable.
