Round steak with fat trimed 1pound
Olive Oil 1T
Garlic diced 1clove
Beef Broth (Swansons) 2 - 14oz cans
Shredded Beets 2 cans
Cabbage chopped 1/2 head
Onion chopped 1/2 onion
Carrots chopped 3
Red Wine Vinegar 4T
Small Red Potatoes 16 quartered
Diced Tomato 2 - 8oz. cans
Sour Cream 16T
Add beef broth, beets cabage, carrots, sugar, red wine vinegar, and bring to a boil then lower heat and simmer for 25 minutes.
Add the potatoes, tomatoes and parsley. Salt and pepper to taste. Cook for 10 minutes.
Divide into 8 bowls and serve with dark bread.
