Lazy Lasagna

Introduction

Ingredients

    8 whole wheat lasagna noodles, broken into 4 pieces each
    1 tsp extra virgin olive oil
    2 cups sliced mushrooms
    1 med green pepper, chopped
    1 med onion, chopped
    1/2 tsp crushed chilies
    1/4 tsp crushed red pepper
    2 cups Ragu original pasta sauce (no meat)
    14 oz diced tomatoes with juice
    12 frozen lean chicken meatballs
    1 tsp oregano
    1/2 tsp basil
    1/4 tsp pepper
    1 cup (about 80g) light marble cheese, grated

Directions

Cook lasagna according to package directions for about 10 minutes. Drain, return to pot and cover.
Meanwhile, heat oil, on med-high, in a large pan which is oven-safe. Add mushrooms, green pepper, onion, chilies and crushed red pepper. Cook until onions are softened, about 5 minutes.
Add pasta sauce, diced tomatoes, frozen meatballs, oregano, basil and pepper. Stir. Bring to a boil and reduce heat to medium. Cover and cook about 5 minutes. Add noodles. Stir.
Preheat broiler. Sprinkle cheese on top. Broil about 5 minutes, until cheese is melted and golden.
