Easy Quiche

Ingredients

    flour, 2 cups
    2/3 cups shortening
    1 red pepper, sliced thinly
    1/2 red onion, sliced thinly
    1 cup mushrooms, sliced thinly
    2 slices bacon, cut up
    2 cups cheddar cheese
    1 cup whole milk
    6 eggs
    thyme, 1 tbsp
    salt and pepper to taste

Directions

In a medium bowl, measure out flour. Add 1/4 tsp salt, mix well. Cut in shortening. Add water, 1 tbsp at a time, until a dough forms. Roll out and cut to fit two pie plates. (this will be a single crust for 2 quiche). Bake at 375 until lightly browned. (about 15 minutes)

Meanwhile, sautee veggies and bacon in olive oil until cooked through. Let cool slightly.

Pull out pie crusts, and divide the veggie mixture evenly. Divide the shredded cheese between the two pie plates, and layer over the veggies.

In a small bowl, whisk eggs until they are frothy. Add milk, thyme, and salt and pepper, and whisk until they are frothy. Pour evenly into each pie plate.

Bake at 400 degrees for 15 minutes, and then reduce heat to 375 and bake for another 25 minutes. Let stand for 10 minutes before cutting and serving.
