Alton Brown's pizza crust

Ingredients

    9.5 oz flour
    1 t. instant yeast
    2 T. Sugar
    2 t. kosher salt
    3 t. olive oil
    3/4 c. filtered water

Directions

hold out 1 cup flour, mix everything else until holds together. Spray the dough hook and knead, adding flour as necessary. Knead for 15+ minutes until dough holds a windowpane.

Roll into ball, place in bowl, and toss w/ 1 t. olive oil. Cover and refrigerate 18-24 hours.

Divide dough into 4, roll into balls, let rest 30 minutes. Can refrigerate up to 6 days. Preheat oven to 500F. Shape into pizza, let rest 30 min. Brush with olive oil, add toppings, let bake 7 minutes, let rest 3 min.
