angie's just like take out fried rice

quick and easy side dish or entree quick and easy side dish or entreeNumber of Servings: 4
Ingredients

1 cup of long grain rice
2 cups of reduced sodium chicken stock
.5 cup frozen peas
pam cooking spray ( high heat best)
minced garlic .5 tsp (fresh or jar)
2 green onions
2 tbsp low sodium / lite soy sauce
2- 5 oz can of chicken breast
2 large eggs
kosher salt and pepper to taste ( dont need much salt)
small skillet to fry eggs
large skillet for rice
Directions
*bring 2 cups of chicken broth to boil- large skillet
*add soy sauce to stock
*add garlic to stock
*add rice, stir, cover and reduce heat to simmer
* finely chop green onions, set aside
*open can of chicken and drain, set aside
*scramble egg in small skillet, set aside
*simmer rice for 20
*stir rice
*add chicken, peas, and egg, cover for remaining 5-10 minutes until rice is cooked through.
makes 4 equal servings for side dish.
makes 2 equal servings for entree (double calories, etc.)
serve along side grilled pork, chicken, steak or fish.

I made it this week and realli liked it. My husband didn't add ketchup to it which he does with most of his food. That means he really liked it too.
I added some sprouts, mushrooms, and carrots squares to increase my veggie servings and my non vegetable eating 3 year old ate the whole thing. - 5/26/10
