I found this to be quite good. I only used 1 egg and made up the balance with egg white to cut out more fat. Instead of chicken, I went with mushrooms. Very tasty.

Sounds like a winner! Only question is why can't you cook the egg in large skillet and then just hold on a plate until time to add it? I love all the suggestions too, this is definitely on my 2009 menus!

This was a great, easy, delicious recipe! I made a double recipe, used fresh chicken, rather than canned and substituted shredded carrots for the peas! Everyone enjoyed.

I loved this recipe! I tweaked it a bit--I used brown rice and I added 2 cups of chopped carrots--and my family loved it! I will definitely make this one again. Thanks for sharing!

Delicious! I omitted the two large eggs (we're running low) and it still tastes just like take-out, only not so fried. I will definitely be making this again. Anyone who loves chicken fried rice (like me) will not be disappointed.

Sounds delicious! One comment - It seems like the nutrition information is for I cup of cooked rice instead of raw, just judging by the amt of carbs per serving.

This was excellent! Just make sure that if you use brown rice, to cook it longer...took twice as long to make that way, but was well worth it. Yum!

With the chicken, it could be considered as a one-pot meal. Love the idea of adding the mushrooms but I didn't know one could get "canned chicken"...so I used fresh rotisserie chicken instead [golden roast or calypso flavour] from the supermarket.

I made it this week and realli liked it. My husband didn't add ketchup to it which he does with most of his food. That means he really liked it too. I added some sprouts, mushrooms, and carrots squares to increase my veggie servings and my non vegetable eating 3 year old ate the whole thing.

This recipe was *SO* easy to make and quick to boot! It has lots of flavor and is filling. It also tasted just as good microwaved the next day!
