Tomato Sherry Chicken

Introduction

This recipe has a nice sweet sauce. Both my 7 & 4 yo kids liked it, and would voted it a keeper! This recipe has a nice sweet sauce. Both my 7 & 4 yo kids liked it, and would voted it a keeper!
Number of Servings: 4

Ingredients

    2 tsp. Olive Oil
    1 lb Chicken Thigh, boneless and skinless
    Salt, sprinkle (optional)
    Pepper, sprinkle
    1 clove Garlic, minced
    1/4 cup Shallots, finely chopped
    8 Sun-dried Tomato halves, quartered
    2 tsp Cornstarch
    1/3 cup Sherry

Directions

Heat oil in a large non-stick skillet on medium. Brown the chicken for 3 or 4 minutes on each side. Add salt and pepper as desired (I use no salt). Remove chicken and keep warm.

Saute garlic and shallots in the skillet juices until browned. Stir in chicken broth. Bring to a boil. Return chicken to pan and coat with sauce. Cover and simmer for 10 minutes or until juices run clear.

Uncover and remove chicken. Stir in tomato and simmer for 3 or 4 minutes. Combine sherry and cornstarch and stir into sauce. Simmer until tomato is soft and the sauce is thickened. Pour sauce over chicken and serve.
