Oatcakes

Introduction

Somewhere between a cracker and bread, these oatcakes are a little crisp, a little chewy and go with just about anything. Somewhere between a cracker and bread, these oatcakes are a little crisp, a little chewy and go with just about anything.
Number of Servings: 24

Ingredients

    2 cups quick oats
    1 cup old fashioned rolled oats
    1/4 cup flaxseed meal
    1 tbls honey
    1 tbls molasses
    1 tsp salt
    1 cup boiling water

Directions

Combine dry ingredients. Stir in honey and molasses. Add boiling water and stir until a dough forms. Allow to cool until easily handled. Knead to ensure thorough combining of ingredients. Allow to cool until the dough is minimally sticky. Roll out on waxed paper to 3/16" thick. Flip over onto a clean surface, and remove waxed paper. Cut into 3" rounds, and place on a cookie sheet. Bake at 350 F for 30 minutes.
Makes 24 3" cakes.
Note: prep time does not include cooling time for dough.
