Seasoned Eggplant

Ingredients

    Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb
    Olive Oil, .5 tbsp
    Garlic, 1 tsp
    Pepper, black, 1 tsp
    Salt, 1 tsp

Directions

Slice eggplant into about 1/2 inch slices. Throw top slice and bottom slice away.
Heat olive oil (on medium high) in pan and add salt, pepper, and garlic to it. (May add any additional spices to your liking.) Spread olive oil to cover bottom of pan.
Place eggplant in pan a few at a time so that they don't overlap.
After they've cooked for about a minute, add about a third cup of water to pan and cover with lid immediately. Let water calm down and then flip each slice of eggplant. Cook each one until it is soft on both sides. May add more water if needed, but avoid using additional olive oil.
Repeat with remaining slices of eggplant.
Serve warm as a side dish.
Makes about 4 servings of about 4-6 slices each (depending on the eggplant).

  • I thought this was super! I actually, sprayed it with butter flavored pan to save on fat. And I added even more pepper! I love Eggplant and this was a super way to make it. - 1/17/08
